NUSC 1165: Fundamentals of Nutrition

Three credits ($150). Offered Fall, Spring, or Full-year.

An introduction to the principles and concepts of nutrition with emphasis on the nature and function of carbohydrates, fats, proteins, minerals and vitamins, and their application to the human organism.

Eligibility Guidelines: Successful completion of two years of high school biology and chemistry courses or instructor consent is required.


Instructor Certification Requirements:

The minimum degree requirement for instructors wishing to teach UConn Early College Experience Nutrition courses can be met through the following options. Preferred applicants will have a master’s degree in Nutrition, Food Science, Kinesiology or have successfully completed relevant graduate coursework in a closely related field as determined by the UConn Department of Nutritional Sciences.

Option 1: A Master’s degree in nutrition, Food Science, Health Science, Kinesiology, Biology, or closely related field; or

Option 2: A Master’s degree in Education with a Bachelor’s degree in Nutrition, Food Science, Health Science, Kinesiology, Biology, or closely related field. Additional consideration will be given to those who hold a CT teaching certification endorsed for either #030 (Biology, 5-12), #043 (Health, PK-12), #072 (School Nurse) or #103/#109 Health Occupations (Dietician/Nutrition Focus)

Applicants who are missing relevant coursework as determined by the UConn Department of Nutritional Sciences may be required to successfully complete additional graduate coursework in Nutrition, including but not limited to NUSC 5000 – Nutritional Biochemistry, NUSC 5200 – Macronutrient Metabolism and NUSC 5300 – Vitamins & Minerals, before certification can be granted.
